My female sparrow does this every single year, I get first egg then waiting 4 or 5 days for the second one sometimes 1 week before the second.
Never stopped them hatching and things always had successful broods of all eggs hatching, Maybe it will be the same for your GT? unless she is hiding more under the wool and just leaving the 1 on show.
